This email should be sent closer to the customer's birthday, you can exclude anyone who has already made a booking around their DOB using Airships search tools so that you aren't pushing customers who have already been converted.
Here you could give them an offer to be redeemed around their DOB, it could be a free drink or a free meal but make sure it's something that really catches the customer's attention - remember they will receive lots of these kinds of emails and you need to stand out.
